Celebrated New Orleans chef Ana Castro opened her first solo restaurant this summer, Acamaya, in collaboration with her sister, Lydia Castro. The food is a vibrant exploration of her sister’s heritage, with dishes featuring Mexican mariscos, a Spanish term for seafood or shellfish. Chef Sophina Uong’s ‘tropical roadhouse’ serves dishes that lean toward Cambodian, Indian, and other Asian flavors, while also drawing inspiration from Southern techniques.
